Spring has Sprung!
So somehow its spring and somehow Homestead. has been open for SIX months! We can't believe how fast the time has flown, how much community support we have received, and the amazing team members who have so quickly become family!
6 months in a restaurant feels like years at times and mere moments at others. We have changed almost every item on the menu at least once, and if not entirely each dish has changed, grown, and improved as we learn how to work together, learn our craft better, and listen to our wonderful guests.
Chef is stubborn, most are, even he will admit how stubborn he is if you push him hard enough. We never wanted to do bread service, and we still don't, but our guests asked again and again for great bread so we gave it to them! We now make handmade focaccia every day and season it with rosemary oil, herbs, and sea salt. Yup, thats right, hand mixing your bread EVERY DAY. We serve it with this incredible Olive oil from a great small company in Italy (and Northampton) called Libellula.
This oil is special, not only to us, but in and of itself. This oil comes from Sabino Italy, just outside of Rome, and the olives grow on threes hundreds of years old that have remained in the small community of Sabino for generations. We, and chef, adopted some of these trees and our oil comes directly from those olives on those trees. We're still working on this partnership to create a stronger bond but we're so excited to have our first round in the restaurant. Soon enough we'll be selling this retail out of the bar so you can enjoy this incredible REAL olive oil at home or with friends.
We're smack dab in the middle of graduation season, so things are busy. The valley is buzzing with life of graduating students, students who have decided they're just done for the semester, locals returning after a cold winter away, and of course a busy busy Mother Earth bring back our spring and warm weather bounty of beauty and delicious product. Things are crazy, things are busy, but we wouldn't ask for it any other way.
We're still here, 7 nights a week, for you. We love seeing new faces and the smiles of returning friends and family. We hope you'll join us again soon and see how much we've grown, how much we've changed, and how far we know we can go.
